Grape: 100% Chardonnay, fruit sourced from 3 commune parcels (30-94 year old vines), hand picked, no herbicides, barrel fermented, 12 months' lees ageing in French oak (up to 30% new wood)

Pillot produces an elegant Chassagne with a light, lemon aroma and vibrant acidity. An harmonious and mouthwatering wine.

"Attractive pale colour. The bouquet is reticent with fresh citrus, and some leesy minerals. Definitely some citrus notes on the palate too along with white apple fruit, good length, well balanced, white wine terroirs. Drink from 2026-2029"

"Such a lovely bouquet of lemon curd, papaya, oaky spice, salty mineral and fresh cut flowers. A medium-long finish, with a fine beam of percolation and cut, yet this has rock and savory fruit. A nice middle and intensity. Drink now - 2035."

Jean-Marc Pillot has been joined by his son, Antonin, and together they produce a superb range of both white and red wines. In recent vintages they have reduced the amount of new oak used. Long, cool fermentations followed by ageing in cask give rich wines with powerful aromas and opulent fruit on the palate. The vineyards are worked organically (uncertified).

Food Match: Pair with lobster, creamy fish soup or Comté cheese.
