The Pedro Ximenez variety is most often used in ultra sweet, dessert style sherries produced in the south of Spain. The grapes for these wines are sun dried until the point of raisining, giving a highly concentrated juice for fermentation. Ageing follows in barrel using the solera system. The resulting wines have flavours and aromas of toffee, figs, chocolate and dried fruit.
