Grapes: A blend of 60% Xarel·lo, Macabeo 30% and 10% Parellada, calcareous & clay soils, traditional bottle fermentation, 15 months' maturation on lees before disgorgement and bottling, 8g/L residual sugar (dry)

Producer Tasting Note:

Pale yellow in appearance with golden reflections, bright and clean. Fine and persistent bubbles that form a constant rosary in the glass, showing its elegance and freshness. Aromas of white fruit such as green apple and pear, citrus lemon, floral touches of orange blossom, and herbal fennel and rosemary. You can also perceive saline and mineral notes, derived from the calcareous soil and the proximity of the Mediterranean Sea. Its complexity is enriched with nuances of bakery, such as almonds, typical of its ageing, which give it depth and elegance. In the mouth, this cava has very fine and well-integrated bubbles, which give it a silky and very elegant texture. The balanced acidity provides freshness and structure. Flavours of white fruit such as green apple and pear are distinguished, with citrus and floral nuances. The finish is clean, persistent, refreshing and balanced making it very gastronomic.

The family wine business was founded 150 years ago by Miquel Tetes Valldosera. Since then, generation after generation, the wines produced have been growing in prestige, the indigenous varieties have improved markedly, and the family name has become inseparably linked to the Penedés area where they are based. The district is situated between Barcelona and Tarragona, with the mountains of Montserrat marking the border in the north and the Mediterranean in the South. The soil is varied, contrasting from chalky clay to sandstone with distinct differences in depth. The mild Mediterranean climate is ideal for growing vines, indeed there is evidence that the Romans planted vineyards here. The slightly wetter weather in the valleys means that there is no need for irrigation.

Food Match: This cava is very gastronomic and pairs perfectly with tapas such as croquettes, squid, Iberian ham, olives and salted potatoes. It is ideal with ceviche, seafood such as oysters and prawns, white fish such as sole or turbot, white meats such as chicken or rabbit and seafood or vegetable rice.
