Description
Bollinger "Special Cuvée" Brut Non Vintage Champagne (Gift Box), France
Grapes: A blend of 60% Pinot Noir, 25% Chardonnay & 15% Pinot Meunier, fruit sourced from over 85% Grand and Premier cru vineyards, barrel fermented, produced from a majority of reserve wines (part of which have been aged in magnums for 5 to 15 years)
Producer Tasting Note:
To the eye: a golden colour, distinctive of black grape varieties; very fine bubbles. To the nose: a beautiful aromatic complexity; ripe fruit and spicy aromas; hints of roasted apples, apple compote and peaches. To the palate: a subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut. One of the finest non vintage Champagnes.
Critics' Tasting Notes:
"At once sophisticated and generous, Bollinger’s "Spécial Cuvée Brut" is more than just a Champagne; it is a symbol of a constant quest for harmony and quality. At first glance, the wine’s brilliant golden hue captivates the eye. Its delicate, persistent bubbles seem to dance in the light. The nose opens with a complex bouquet in which ripe fruits—apple, pear, and candied citrus—mingle with subtle aromas of brioche and hazelnut, hallmarks of cellar aging. A hint of honey and white flowers rounds out this olfactory symphony. On the palate, the attack is lively, fresh, and almost vibrant. Pinot Noir, the dominant grape, provides refined structure and remarkable length, while Chardonnay imparts a minerality and tension that elevate every sip. Flavors unfold in a balanced dance: yellow fruits, subtle spices, and a touch of toastiness. The finish is silky and infinitely elegant, leaving a memorable impression. Serve at approximately 10°C. Delicious as an aperitif or paired with smoked sturgeon canapés, poultry with mushrooms, sushi, pan-seared red snapper, grilled lobster, langoustines, or crab cakes."
93/100 points, BACCHUS MAGAZINE (Canada), December 2024
"Medium golden yellow. Fine bubbles. Candied citrus zest on the nose, light stone fruit, green apple, subtle hints of pastry and honey. Slender and elegant on the palate with a sweet centre and very fine, creamy mousse. Harmonious and salty-citrusy on the juicy finish. Hardly better value for money."
94/100 points, FALSTAFF (Austria), September 2025
Food Match: Bollinger recommend pairing with either a truffled scallop carpaccio, or a spicy Kabocha squash and mature Mimolette cheese & walnut carbonara.
