Grapes: A blend of 80% Merlot and 20% Cabernet Franc, 5.5ha vineyard on clay/limestone soil, manual harvest and sorting, 40hl/ha yield, destemmed and whole berry fermentation in steel vats, 12-14 months' ageing in French oak barrels (1/3 new)

The Saint-Georges Côte Pavie 2016 reveals a complex bouquet combining red fruits, notes of undergrowth and spicy touches. On the palate, the balance is remarkable between power and finesse, supported by precise tannins and a beautiful freshness. A vintage of elegance and depth, faithful to the Saint-Émilion terroir.

This classified growth estate of 5.7 hectares (5 ha located on the clay-limestone slopes of Pavie and 50 ares adjoining Ausone) was a dependency of the Abbey of La Sauve-Majeure in the Middle Ages (when it took its name of Saint-Georges), then the property of the de Grailly family from the 17th century onwards. Acquired in 1873 by the Masson family, originally from Corrèze, it is now managed by the fifth generation.

Food Match: Chateau St. Georges Cote Pavie is best paired with all types of classic meat dishes: veal, pork, beef, lamb, duck, game, chicken; roasted, braised or grilled. It is also good when matched with Asian dishes, mushrooms, pasta, and rich fish courses like tuna and salmon. Serve between 16°C and 18°C
