Neige Cidre de Glace (Apple Ice Cider), Canada
Neige - French for "snow" - is a rare delicacy from the Quebec region of Canada. Apples are late-picked at harvest, then the Canadian cold sets to work: the juice is taken outside into the depths of the sub-zero winter, where the water content freezes out as ice. The naturally concentrated juice left behind is then fermented to produce a Neige Ice Cider.
The apples used to produce Neige are Canadian favourites - McIntosh and Cortland, eating varieties chosen to emphasise the flavour of a crunchy, delicious red apple rather than a typical cider. It's slightly sweet but never cloying, and can be enjoyed on its own as a shared treat in small wine glasses.
