Grape: 100% Riesling, handpicked fruit from the Brookby Hill & Jomara vineyards in the Southern Valleys, loess over clay soil, in organic conversion since 2020, medium dry style (17g/l RS), unoaked.

Producer Tasting Note:

Aromas of Kaffir lime, lemon and Jasmine blossom are mixed with hazelnuts and a touch of spice. The palate is bright and pure with a beautiful grainy texture, honeysuckle, and ripe citrus flavours. This waxy textured riesling has great concentration and a lovely balance of sweetness and mouth-watering acidity.

"Bright, even, pale yellow. This has a lifted bouquet with aromas of citrus, green apple and blossom. Medium-light bodied, off-dry to taste, aromas of lime and lemon tea melded with Granny Smith, jasmine and lime blossom. The fruit shows purity with taut acidity and verve, a tight phenolic touch contributes to a drier style that goes well with food. Match with crispy pork belly and green curry over the next 5 years. Fermented cold in stainless steel to 10.5% alc, 24 g/l RS, rested on fine lees for 5 months."

"Fantastic bouquet filled with scents of sweet makrut lime and mandarin, honeysuckle and red apple flesh. Aromas also of rose and white mineralised stone. Equally delicious on the palate presented in an off-dry style with acidity and sweetness in perfect balance. Flavours are persistent adding to a lengthy finish. A wine ready to enjoy from day of purchase through 2033+."

Winemaking: Partially whole bunch pressed and then fermented cool in stainless steel. The fermentation was stopped when the sweetness and acidity were in perfect balance. The wine then rested on fine lees for three months to gain texture and palate weight.
