Laroche’s favourite Grand Cru, Les Blanchots is characterised by fragrance and elegance and tended organically. A slow developer, it shows best after a good few years in bottle.

The Region: Crossed from south to north by the Serein river, the Chablis vineyard is structured around valleys and hillsides distributed between the right and left banks. The landscape is undulating, alternating between vineyards and forests. It is on these favorable slopes and the famous Kimmeridgian limestone marls that the Chablis, Chablis Premier Cru, and Chablis Grand Cru climats were born, drawing their purity, finesse, and complexity from them. The more recent Portlandian subsoils, located on the plateaus and high hillsides, form the terroir of the Petit Chablis appellation.

The renowned Les Blanchots Grand Cru, on the right bank of the Serein, located directly due east of the town of Chablis itself, is a unique terroir made of a layer of white clay on Kimmeridgian limestone with ammonites. This is the ideal combination to keep the right amount of water for roots. The South-East exposure allows slow ripening and favours aroma development.

Food Match: Fish in Hollandaise sauce, lobster salad, aged goat cheeses

This is part of a restaurateurs private collection. The wines from the collection are in excellent drinking condition with the levels all around and above top shoulder.
