Rich plum aromas lead, showing ripe dark fruit character. Subtle savoury notes add depth and balance, giving a gently earthy, lightly spiced aromatic profile. The palate is packed with elegant flavours of spice, plums and dark berries, the palate is juicy and vibrant with layered red and black fruit. A fine bead brings freshness and energy, supported by soft tannins and balanced acidity, finishing smooth and lingering with plum and berry notes.

Estate: Family owned and operated since 1983, Neil and Alison Paulett founded the winery now helmed by son Matt and his wife Ali. As a small-batch winery, the fruit from Pauletts' vines speaks for itself. Choosing quality over yield to ensure the wine produced is a true expression of vintage, variety and the unique characteristics of their Polish Hill River site.

This extraordinary speciality red sparkling wine is based on a cool climate Shiraz/Cabernet blend from vines situated on the Trillians Hills in Clare Valley. It can be consumed now or aged up to five years.

Winemaking: Machine-harvested and gently pressed to minimise colour pickup. Using neutral yeast, and crafted using the Charmat Method, this sparkling wine undergoes secondary fermentation in a pressurised tank, marrying fine, persistent bubbles with layered complexity from multiple vintages. Stabilised, filtered, and bottled young to capture the fresh, juicy fruit characters. 

Food Match: Pair with roasted poultry (turkey, duck, goose or game birds such as pheasant) in rich sauces, BBQ & charred meats (sausages, chorizo, chargrilled steak, honey-glazed pork), meat pâtés and terrines. mature Cheddar cheese, rich desserts (plum/Christmas pudding, dark chocolate torte, Black Forest gâteau)
