Grape: A blend of 85% Pinot Grigio, 13% Chardonnay and 2% Pinot Nero, unoaked

Producer Tasting Note:

A fresh, easy drinking wine with strawberry aromas. Crisp and delicate on the palate with subtle raspberry and hints of redcurrant. A slight creaminess lends to the mouthfeel and is followed by refreshing acidity.

Winemaking: Grapes are sourced from selected vineyards in Veneto and Trentino, where the vines are cultivated in well-drained soils. After harvesting, the grapes are destalked, crushed and the must including the skins is immediately cooled to around + 8 °C. Before pressing, 4-5 hours’ cold maceration is carried out in total absence of air in order to encourage extraction of the aromas from the skins. This gives the wine its delicate dusky pink colour from the natural pigmentation of ripe Pinot Grigo grapes. Once maceration has been completed, the crushed grapes are softly pressed (by pneumatic press) and the must fermented in stainless steel at a temperature of around 18°C.

Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy.

Food Match: Excellent on its own as an aperitif, but also suited to salads, fish and grilled chicken.
