Grape: 100% Riesling, handpicked fruit from Hawkesbury Vineyard in the Southern Valleys, loess over clay soil, in organic conversion since 2020, medium dry style (12g/l RS), aged on lees, unoaked

Producer Tasting Note:

Aromas of Kaffir lime, lemon, jasmine and orange blossom are mixed with hazelnuts and a touch of spice. The palate is bright and pure with a beautiful grainy texture, honeysuckle, and ripe citrus flavours. This waxy textured Riesling has great concentration and a lovely balance of sweetness and mouth-watering sherbet acidity.

"An excellent wine, scents of mandarin and lime-flower, apple and a touch of sherbet. On the palate an off-dry expression with a rush of sweetness and flavours contrasted almost immediately by an intense acid line. Flavours mirror the bouquet led by lemon then mandarin, apple and sherbet. Salivating and plush, fresh and precise, focused and lengthy. Best drinking from day of purchase through 2032."

"Bright, even, pale yellow with a light green hue. The nose is gently full, with aromas of lime, stonefruit, stony minerals, blossom and saline. Medium-bodied, aromas of lime and kumquat melded with peach, stony minerals, lime blossom and a long linger with saline. The fruit is ripe, with a distinct citrus backbone; taut acidity injects a mineral mouthfeel, and saline with spears lend a lengthy, electric finish. Match with oyster kilpatirck and paua shabu shabu over the next 5+ years. Fruit from Hawkesbury Vineyard in the Southern Valleys, fermented cold in stainless steel to 10.5% alc, 12 g/l RS, then rested on fine lees for five months.

Winemaking: Partially whole bunch pressed and then fermented cool in stainless steel. The fermentation was stopped when the sweetness and acidity were in perfect balance. The wine then rested on fine lees for five months to gain texture and palate weight.
